Chocolate Chip Macadamia Nut Cookies
Ingredients
2 cups salted butter, room temperature
3 cups packed light-brown sugar
1 cup granulated sugar
4 large eggs
2 teaspoons pure vanilla extract
3 ½ cups all-purpose flour
1 ½ teaspoons salt
2 teaspoons baking soda
1 ½ cups good quality chocolate chips
1 ½ cups macadamia nuts, coarsely chopped
Preparation
Preheat oven to 375°F. Line two baking sheets with Silpat baking mats or parchment paper and set aside.
Cream butter with sugars until smooth. Add eggs one at a time, then vanilla, beating until fully incorporated.
In a large bowl, sift together dry ingredients. Slowly beat dry ingredients into the butter mixture until just combined. Fold in chocolate chips and chopped macadamia nuts. Wrap in plastic and chill in the fridge for 30 minutes.
Use a small ice cream scoop to drop cookies onto prepared baking sheets, spacing at least 2 inches apart to allow for spreading.
Bake until golden, 8 to 10 minutes. Remove cookies from baking sheets and allow to cool on baking racks.
