Ingredients

Homemade french fries

4 large potatoes, Yukon gold or russet

1 1⁄2 cups canola oil for frying

Coarse salt and freshly ground pepper, to taste


Peel and cut potatoes lengthwise into 1⁄4 -inch thick slices; cut each slice into 2-inch strips. In medium heavy-bottomed saucepan, heat oil to high heat. Carefully add potato slices in small batches and cook 3 minutes or until lightly golden. Remove with slotted spoon and drain on paper towel. Repeat with remaining slices. Sprinkle with salt and pepper and serve immediately. Serves 6 to 8.
