Italian Pork sausage with fennel

Italian pork sausage with fennel is a classic combination that delivers bold, savoury flavours with a subtle hint of sweetness from the fennel seeds. Perfectly seasoned and juicy, this sausage adds a deliciously aromatic touch to pasta, pizzas, and sandwiches, making it a versatile favourite in any kitchen. Ingredients

1 kg ground pork (loosely ground)

6 g fennel (wild if possible)

6 g freshly ground black pepper

6 g tablespoon red chili flakes

1/4 cup white dry wine (Pinot Grigio)

15 g kosher salt


Preparation

Preheat oven to 350°. Place all ingredients in large bowl and combine by hand until well incorporated. Using approximately ½ cup sausage mixture, make ball and flatten slightly. Continue with remaining sausage meat.

Heat drizzle olive oil in heavy skillet, and cook sausage patties until well cooked through about 4 minutes per side. Serves 4-6.
