Chicken Salad with Feta and Balsamic


Ingredients

2 chicken breasts, cooked and diced

1⁄4 cup mayonnaise

2 tablespoons balsamic vinegar

1⁄4 cup crumbled feta cheese

Freshly ground pepper, to taste

1 cup baby spinach leaves

6 slices tomato


Method

In medium bowl, combine chicken, mayonnaise, balsamic vinegar, feta and pepper. Mix well. Serve with spinach and tomato in mini pita or on your favourite bread. Serves 4-6.
