Mari’s Mom’s Waffles with White Sauce
My mom makes these beautiful, light, and crispy waffles. Really amazing how light and crispy they always are. She tops them with this surprisingly easy sweet sauce.
Mari’s mom’s best waffles with white sauce
1 ¼ cups all-purpose flour
½ teaspoon salt
3 teaspoons baking powder
1 cup whole milk
¼ cup light cream
½ cup butter, melted
2 egg yolks
2 egg whites, beaten until stiff
White sauce
1 ½ cups milk
¼ cup waffle batter
3 teaspoons sugar
1 teaspoon vanilla
1 tablespoon cornstarch
For white sauce, in a small pot over medium heat, combine milk, batter, sugar and vanilla. Place cornstarch in separate bowl and add 1/4 cup of the milk mixture. Whisk until smooth; add back into milk mixture. Bring to a boil, whisking constantly until thickened. Set aside.
For waffles, in a large bowl, combine dry ingredients; set aside. In another bowl, whisk milk, cream, butter and egg yolks. Add milk mixture to flour mixture and whisk until smooth and light. Gently fold in egg whites. Batter should be quite runny, not thick, add more milk if needed. Bake in waffle iron according to directions. Serves 4.
