Copy Cat Joey’s Blackened Chicken


To say I’m obsessed with this dish, is accurate. I’ve had it many times, and it’s always so good. I hope you enjoy it!


Ingredients

2 boneless, skinless chicken breasts, slightly flattened with a mallet

Blackening Seasoning

2 teaspoons kosher salt

1 ½ tablespoons paprika

1 tablespoon garlic powder

1 tablespoon onion powder

1 tablespoon ground dried thyme

1 teaspoon ground black pepper

1 teaspoon cayenne pepper

1 teaspoon dried basil

1 teaspoon dried oregano


Preparation

Preheat the oven to 350°. Place a large (at least 10") cast-iron skillet into the oven to preheat. 

For seasoning, in a small bowl, combine all ingredients and stir to combine. Generously season chicken breasts all over with seasoning. Remove skillet from oven and place onto stovetop, add butter and melt over medium-high heat. Sear chicken breasts on both sides, about 3 to 5 minutes each side, until the chicken gets a nice char. Place skillet back into the oven and cook chicken another 5 to 7 minutes. Remove from skillet and rest 10 minutes before serving.
