Brown Sugar and Citrus Roasted Salmon
Recipe & Food Styling Marisa Curatolo, Photography ANNA Magazine
This salmon gets its incredible flavour from a simple combination of brown sugar, fresh lemon juice and extra-virgin olive oil. The brown sugar adds just enough sweetness to balance the richness of the salmon, while fresh lemon keeps everything bright.
But what really makes this dish beautiful is the citrus.
Thin slices of lemon, lime and mandarin orange are layered alongside the salmon with red onion before everything goes into the oven. As the salmon gently roasts, the citrus softens and the brown sugar mixture creates a delicious sweet-tart glaze. Proof that roasting really is one of the simplest ways to make great salmon.
To serve, layer salmon with more fresh citrus and fresh dill.

1 (2–3 pound) Atlantic Salmon, half side
Sea salt and freshly ground pepper, to season
1/4 cup packed brown sugar

2 lemons, thinly sliced
2 limes, thinly sliced
2 mandarin oranges, thinly sliced
½ red onion, thinly sliced
Fresh dill, to serve
Preparation
Preheat oven to 350°F. Place salmon, skin side down, on parchment-lined baking sheet. Season with salt and pepper.
In a small bowl, combine brown sugar, lemon juice and olive oil. Brush mixture generously over fish. Layer sides of salmon with citrus and red onion slices. Bake 20 to 25 minutes or until salmon flakes when tested with fork. To serve, garnish generously with fresh dill.
